I saw this great video analysis of a very old Sefer Torah (Hat tip to MelechMichaels). It's a must see and it features a neat trick of hanging letters on top of a line which I explored in an earlier post.

I don't think he is correct about the reason for the folds between the columns.
I think that sifrei torah written on gvil were routinely folded like that in order that they stay open when reading, because otherwise the gvill is very tight and is hard to keep open.
I was also surprisedmby this claim. It coulld be but is all speculation...
